Instructions
Cook Noodles
Boil egg noodles in salted water according to package directions until tender then drain and set aside.
Sear Beef
Heat a large skillet over very high heat and sear beef strips in batches for 1 to 2 minutes per side until browned then remove from pan and set aside.
Cook Mushrooms and Make Sauce
Add mushrooms to the same skillet and cook for 3 minutes until golden then pour in beef broth and Dijon mustard and simmer for 2 minutes.
Finish with Sour Cream
Remove pan from heat and stir in sour cream until smooth then add beef back to the sauce and serve immediately over egg noodles.
