Melt the dark chocolate with half a cup of heavy cream in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let it cool for 5 minutes, then whisk in the egg yolks and salt one at a time until fully incorporated.

In one bowl whip the remaining 1 cup of heavy cream to soft peaks. In a separate very clean bowl whip the egg whites to stiff peaks. Gently fold the whipped cream into the chocolate mixture first, then carefully fold in the whipped egg whites in two additions.

Divide the mousse evenly among 4 serving glasses or ramekins and refrigerate for at least 2 hours until set and chilled. Serve cold with a dusting of cocoa powder or a few chocolate shavings on top if desired.
