Whisk together eggs and buttermilk in a large bowl until combined. Add the self-rising flour and salt and stir until just incorporated. A few small lumps are perfectly fine as overmixing will make the waffles tough.

Preheat your waffle iron according to the manufacturer instructions and lightly brush the plates with neutral oil to prevent sticking. Allow it to fully heat before adding any batter.

Pour enough batter to fill about three quarters of the waffle iron surface. Close the lid and cook for 3 to 4 minutes until steam stops escaping from the sides and the waffles are golden and crispy. Serve immediately with maple syrup and butter.
