Bake the Potatoes
Preheat oven to 400 degrees F. Rub potatoes with olive oil and salt, poke several times with a fork, and bake directly on the oven rack for 50 to 55 minutes until tender throughout. Let cool for 10 minutes.
Scoop and Crisp the Skins
Slice each potato in half lengthwise and scoop out most of the flesh leaving a quarter-inch border. Brush the inside and outside of each skin with olive oil, season with salt, and bake cut-side down at 425 degrees F for 10 minutes until crispy.
Load and Melt
