Make Flax Egg
Mix 1 tablespoon of ground flaxseed with 3 tablespoons of water in a small bowl and let it sit for 5 minutes until thickened into a gel. This simple vegan egg replacement holds the cookies together perfectly.
Mix the Dough
In a medium bowl combine the peanut butter sugar and prepared flax egg. Stir vigorously until the mixture forms a cohesive thick dough. It should hold together when pressed between your fingers.
Shape the Cookies
Preheat your oven to 350 degrees F and line a baking sheet with parchment paper. Roll the dough into 12 equal balls and place them on the prepared sheet. Use a fork to press a crosshatch pattern into each cookie flattening them to about half an inch thick.
