Instructions
Prepare the Beets
Peel the fresh beets using a vegetable peeler and chop them into small chunks. Wear gloves during this step as raw beet juice will stain your hands and cutting board intensely.
Blend the Beet Water
Add the chopped beets, orange juice, lime juice, agave nectar, and 2 cups of cold water to a blender. Blend on high speed for 2 to 3 minutes until completely smooth and deeply colored.
Strain into Pitcher
Pour the beet mixture through a fine mesh strainer lined with cheesecloth into a large pitcher to remove all fibrous beet solids. The resulting liquid should be a beautiful deep ruby red color.
Dilute and Serve
Stir in the remaining 2 cups of cold water and adjust sweetness as needed. Serve immediately over ice garnished with a thin orange slice for a gorgeous presentation at any gathering.
