Instructions

1

Blend the Guavas

Wash and quarter the fresh guavas, removing any damaged spots but leaving the seeds and skin on. Add to a blender with 2 cups of cold water and blend on high speed for about 60 seconds until smooth.

2

Strain Thoroughly

Pour the blended guava mixture through a fine mesh strainer into a large pitcher, pressing firmly to extract all the pink juice. Guava seeds are hard so straining is essential for a smooth drink.

3

Sweeten and Serve

Add the remaining cold water, lime juice, sugar, and salt to the pitcher and stir until the sugar dissolves. Taste and adjust sweetness and acidity, then serve over ice with lime slices.

Substitutions

fresh guavascanned guava nectar diluted with water as a more accessible alternative in areas without fresh guava
granulated sugarhoney which complements the floral guava flavor particularly well

Common mistakes

Not straining the guava thoroughly enough leaves hard guava seeds in the drink which are unpleasant to drink through
Using unripe guavas which are green and very firm produces a bitter and astringent flavor so use only soft fragrant guavas
