Instructions
Soak the Rice
Place the white rice in a bowl and cover with 2 cups of warm water. Let the rice soak for at least 4 hours or overnight to soften the grains and release starch for a creamy texture.
Blend the Base
Drain the soaked rice and transfer to a blender with coconut milk, cinnamon, sugar, and vanilla extract. Blend on high for 2 minutes until the mixture is completely smooth and creamy.
Strain and Dilute
Pour the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher, pressing gently to extract all liquid. Stir in 4 cups of cold water and taste for sweetness.
