Blend the Papaya
Add papaya cubes, lime juice, ginger if using, and 1.5 cups of cold water to a blender. Blend on high until completely smooth and creamy with a gorgeous orange color.
Strain the Mixture
Pour blended papaya through a fine mesh strainer into a large pitcher pressing gently to extract the juice. Papaya is very smooth so straining is quick and easy.
Finish the Agua Fresca
Stir in the remaining cold water and sugar until fully dissolved. Taste and adjust lime juice for tartness and sugar for sweetness based on the ripeness of your papaya.
Serve Chilled
