Instructions
Blend the Pineapple
Add the fresh pineapple chunks to a blender with 2 cups of cold water and blend on high speed until completely smooth and liquefied, about 60 seconds.
Strain the Juice
Pour the blended pineapple through a fine mesh strainer into a large pitcher, pressing firmly with a spoon to extract all the juice. Discard the remaining fibrous pulp.
Combine and Chill
Stir in the remaining cold water, fresh lime juice, and sugar until the sugar fully dissolves. Taste and adjust sweetness as needed. Refrigerate for 20 minutes, then serve over ice garnished with fresh mint.
