Instructions
Prepare the Carrots
Peel and roughly chop the fresh carrots into small pieces to make blending easier and more efficient. The smaller the pieces the smoother your agua de zanahoria will be after straining.
Blend the Carrot Agua Fresca
Add the chopped carrots, orange juice, grated ginger, honey, and 2 cups of cold water to a high powered blender. Blend on high for 2 to 3 minutes until the mixture is completely smooth and bright orange.
Strain for Clarity
Pour the blended carrot mixture through a fine mesh strainer into a large pitcher pressing firmly on the solids to extract maximum liquid. The strained agua fresca should be a beautiful clear orange color.
Dilute and Chill
Stir in the remaining 2 cups of cold water and taste for sweetness and ginger heat. Refrigerate for 20 minutes then serve over ice with an orange wedge garnish for a vibrant and healthy presentation.
