Dry the Chickpeas
Drain and rinse the chickpeas thoroughly in a colander. Spread them out on a clean kitchen towel or several layers of paper towels and pat them completely dry. Removing as much surface moisture as possible is the most critical step for achieving maximum crunchiness.
Season the Chickpeas
Transfer the dried chickpeas to a bowl and remove any loose skins that have come off during drying. Drizzle with olive oil and add the smoked paprika, garlic powder, cumin, cayenne, and a generous pinch of salt. Toss until every chickpea is evenly coated.
Air Fry Until Crispy
Pour the seasoned chickpeas into the air fryer basket and spread them into an even layer. Air fry at 400 degrees F for 15 to 18 minutes, shaking the basket every 5 minutes to ensure even cooking, until the chickpeas are deeply golden and very crunchy.
Cool and Store
Remove the chickpeas from the air fryer and spread them on a wire rack or baking sheet to cool completely for at least 5 minutes. They will continue to crisp up as they cool. Store any leftovers in an uncovered bowl at room temperature to maintain their crunch.
