Air Fryer Egg Rolls

Cook the Filling
In a large skillet over medium high heat, cook the ground pork breaking it into small pieces until fully cooked and no longer pink, about 6 minutes. Add the coleslaw mix, soy sauce, and grated ginger and stir fry together for 2 to 3 minutes until the cabbage is slightly wilted. Remove from heat and allow to cool for 5 minutes.
Roll the Egg Rolls
Lay an egg roll wrapper on a clean flat surface in a diamond orientation. Place about 3 tablespoons of the cooled filling in the center. Fold the bottom corner up over the filling, then fold in the two side corners. Roll tightly toward the top corner and seal the edge with a dab of water. Repeat with remaining wrappers and filling.
Air Fry the Egg Rolls
Lightly spray the air fryer basket with cooking spray. Arrange the egg rolls in a single layer seam side down, making sure they do not touch each other. Spray the tops of the egg rolls generously with cooking spray. Air fry at 390 degrees F for 10 to 12 minutes, turning halfway through, until deeply golden and crispy.
Serve with Dipping Sauce
Remove the egg rolls from the air fryer and let them rest for 2 minutes before serving as the filling will be extremely hot inside. Serve immediately with sweet chili sauce, soy sauce, or duck sauce for dipping. They are best enjoyed fresh and hot for maximum crispiness.
