Instructions
Preheat and Mix Wet
Preheat oven to 375 degrees Fahrenheit and line two baking sheets with parchment paper, then beat together the softened coconut oil, coconut sugar, applesauce, and vanilla extract in a large bowl until smooth and creamy.
Add Dry Ingredients
Stir the gluten free flour and baking soda together in a separate bowl then gradually add to the wet mixture stirring until a soft dough forms that holds together when pressed.
Fold in Chocolate Chips
Gently fold in the allergy free chocolate chips until evenly distributed throughout the dough, then use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets about two inches apart.
Bake and Cool
Bake for 10 to 12 minutes until the edges are set and just beginning to turn golden, then let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack as they firm up as they cool.
