Instructions
Cook the Apple Filling
Melt butter in a skillet over medium heat. Add diced apples, sugar, cinnamon, and nutmeg. Cook for 5 to 7 minutes until the apples are tender. Stir in cornstarch and cook for 1 more minute until the filling thickens. Remove from heat and let cool completely.
Wrap the Egg Rolls
Place an egg roll wrapper in a diamond shape on a flat surface. Spoon 2 to 3 tablespoons of cooled apple filling into the center. Do not use hot filling as steam will make the wrappers soggy. Fold and roll tightly, sealing the edge with water.
Heat the Frying Oil
Heat vegetable oil in a deep pot over medium high heat to 350 degrees Fahrenheit. Maintain this temperature throughout frying for the best crispy results.
Fry Until Golden
Fry egg rolls in small batches for 2 to 3 minutes per side until deep golden brown. Work in batches to avoid crowding the pot which drops the oil temperature. Drain on paper towels immediately after removing from the oil.
Coat in Cinnamon Sugar and Serve
While still warm, roll each egg roll in cinnamon sugar to coat the outside. Serve immediately with a side of caramel dipping sauce or a scoop of vanilla ice cream.
