Instructions
Make the Batter
In a small bowl, mash the ripe banana until completely smooth with no large lumps. Crack in the eggs and whisk everything together until you have a thin smooth batter. Add cinnamon if using.
Heat the Pan
Heat a non stick skillet over medium low heat and add the coconut oil. The pan should be at a low enough temperature that the pancakes cook slowly without burning on the outside.
Cook the Pancakes
Drop small spoonfuls of batter onto the pan making pancakes about 2 inches wide. Cook for 2 to 3 minutes until the edges look set, then gently flip and cook another 1 to 2 minutes.
Cool and Serve
Allow the pancakes to cool on a plate until they are just warm. Cut them into finger sized strips for baby led weaning or serve small whole rounds for babies with better grip.
