Bacon Alfredo Bucatini

Instructions
Cook the Bucatini
Boil bucatini in well-salted water until al dente, about 8 to 9 minutes. Reserve one cup of pasta water before draining.
Fry the Bacon
While pasta cooks fry diced bacon in a large pan until crispy, about 4 minutes, then remove with a slotted spoon and set aside.
Make the Alfredo Sauce
In the same pan with bacon fat add butter and garlic, cook for 30 seconds, then pour in cream and simmer for 2 minutes until slightly thickened.
Finish and Toss
Remove pan from heat, stir in Parmesan, add drained bucatini and reserved pasta water, toss until sauce is glossy and clings to the pasta, then top with crispy bacon.
