Bacon Wrapped Egg Bites

Instructions
Preheat and Form the Bacon Cups
Preheat your oven to 400 degrees F and line a 6 cup muffin tin with cooking spray. Press one strip of bacon around the inside of each muffin cup forming a ring that will hold the egg filling. Thin cut bacon works best as it wraps easily without breaking.
Fill with Egg Mixture
Season the beaten eggs with black pepper and carefully pour the egg mixture into each bacon lined muffin cup filling each about three quarters full. Sprinkle a small pinch of shredded cheddar cheese over the top of each cup.
Bake and Serve
Bake for 10 to 12 minutes until the eggs are fully set and the bacon is crispy and golden around the edges. Use a small offset spatula or spoon to carefully lift each egg bite out of the tin. Garnish with fresh chives and serve hot.
