Instructions
Prepare the Batter
In a large mixing bowl, combine flour, Old Bay seasoning, salt, black pepper, and enough cold water to create a thick pancake-like batter. Stir until smooth with no large lumps.
Fold in Ingredients
Add the diced conch, red bell pepper, and celery into the batter. Mix well to distribute everything evenly. The batter should be thick enough to hold its shape when dropped by the spoonful.
Fry the Fritters
Heat vegetable oil in a deep skillet to 350 degrees Fahrenheit. Carefully drop heaping tablespoons of the batter into the oil and fry for 3 to 4 minutes per side until deep golden brown.
Drain and Serve
Remove the fritters with a slotted spoon and drain on paper towels. Serve immediately with a remoulade or spicy aioli and fresh lime wedges on the side.
