Preheat oven to 400 degrees F and grease a 24-cup mini muffin tin thoroughly. In a bowl combine cornbread mix, milk, egg, and honey and stir until a smooth batter forms.

Spoon batter into each mini muffin cup filling them about halfway then press one piece of hot dog vertically into the center of each cup pushing it down slightly.

Bake for 13 to 15 minutes until the cornbread is puffed golden and a toothpick inserted beside the hot dog comes out clean with no wet batter.

Let the bites cool in the tin for 5 minutes before removing then cool completely on a rack before packing into lunchboxes with a small dipping cup of ketchup or mustard.
