Banana Oat Energy Bites

Instructions
Mash and Mix
Peel and mash both bananas in a large mixing bowl until completely smooth with no large lumps. Add the peanut butter, honey, and vanilla extract and stir everything together until well combined.
Add Dry Ingredients
Fold the rolled oats and mini chocolate chips into the banana mixture using a spatula until all the oats are evenly coated and the mixture holds together when pressed.
Chill the Mixture
Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes. Chilling firms up the mixture so it is easier to roll into balls.
Roll and Serve
Scoop out about one tablespoon of mixture at a time and roll between your palms into a smooth ball. Place finished bites on a parchment-lined plate and serve or store in an airtight container.
