Mash Bananas and Mix Batter
In a large bowl mash the ripe bananas until smooth. Add the egg and milk and stir to combine. Add the flour and baking powder and mix until just combined. Do not overmix or the pancakes will be tough.
Heat the Pan
Heat a nonstick skillet or griddle over medium heat and add a small pat of butter. Let the butter melt and coat the surface evenly before adding batter.
Cook the Pancakes
Pour about a quarter cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes, then flip and cook another 1 to 2 minutes until golden brown.
