Marinate the Beef

In a bowl, combine the sliced beef with 1 tablespoon cornstarch, 1 tablespoon soy sauce, and 1 tablespoon sesame oil. Toss to coat and let marinate for 10 minutes while you prep the other ingredients.

Make the Sauce

In a small bowl, whisk together the remaining soy sauce, oyster sauce, beef broth, remaining cornstarch, and remaining sesame oil. Set aside. This sauce goes in fast so having it ready is important.

Cook the Broccoli

Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add the broccoli and stir fry for 3 to 4 minutes until bright green and slightly tender. Remove and set aside.

Sear the Beef

Add the remaining oil to the wok and heat until smoking. Add the beef in a single layer and sear without stirring for 1 minute. Add garlic and ginger, then stir fry everything together for another 1 to 2 minutes until beef is browned.

Combine and Finish

Return the broccoli to the wok and pour the sauce over everything. Toss and stir fry for 1 to 2 minutes until the sauce thickens and coats all the ingredients. Serve immediately over steamed white rice.
