Beet Chocolate Cake

Instructions
Preheat and Prepare Pan
Preheat oven to 350 degrees F. Grease and flour two 8 inch round cake pans or one 9x13 pan. Drain canned beets and blend them in a food processor until completely smooth with no chunks.
Mix Wet Ingredients
In a large bowl beat eggs, oil, and beet puree together until smooth and well blended. The mixture will be a deep purple color which will transform to rich chocolate brown once the cocoa is added.
Add Dry Ingredients and Bake
Sift in flour, cocoa powder, sugar, and baking soda then stir until just combined. Pour into prepared pans and bake for 32 to 35 minutes until a toothpick inserted in the center comes out clean.
Cool and Frost
Allow cake to cool completely in pans for 20 minutes then turn out onto a wire rack. Frost with your favorite chocolate buttercream and no one will ever guess the secret ingredient.
