Preheat and Prep Berries
Preheat oven to 425 degrees and line a baking sheet with parchment paper. In a bowl, toss the mixed berries with 2 tablespoons of sugar and the cornstarch until evenly coated.
Shape the Pastry
Unfold the thawed puff pastry sheet onto the prepared baking sheet. Using a fork, lightly score a one-inch border around the edge being careful not to cut all the way through the pastry.
Fill and Fold
Pile the berry mixture onto the center of the pastry inside the scored border. Fold the edges up and over the berries slightly, pressing gently at the corners to seal. Brush the border with beaten egg and sprinkle remaining sugar on the crust.
Bake and Serve
Bake at 425 degrees for 12 minutes until the pastry is deeply golden, puffed, and the berries are bubbling and jammy. Allow to cool for 2 minutes before slicing and serving warm.
