Instructions
Season the Beans
In a small bowl, mash about half the black beans with a fork to help them stick together. Stir in the chili powder, garlic powder, and a pinch of salt. Mix in the remaining whole beans and set aside.
Assemble the Quesadillas
Lay two tortillas flat on a clean surface. Spread the bean mixture evenly over one half of each tortilla, then sprinkle a generous amount of shredded cheese over the beans. Fold the empty half of each tortilla over the filling to create a half-moon shape.
Cook Until Crispy
Heat one tablespoon of oil in a large skillet over medium heat. Add one assembled quesadilla and cook for 3 minutes per side until golden brown and the cheese is fully melted. Repeat with the remaining oil and quesadilla.
Slice and Serve
Transfer the cooked quesadillas to a cutting board and let them rest for one minute. Cut each into three wedges using a sharp knife or pizza cutter. Serve immediately with salsa or sour cream if available.
