Make the Blueberry Syrup

In a small saucepan combine blueberries, sugar, water, and lemon juice. Cook over medium heat for 8 to 10 minutes stirring occasionally until the blueberries burst and the syrup thickens. Strain through a sieve and let it cool completely.

Whisk the Matcha

Sift the matcha powder into a small bowl or mug. Add 3 tablespoons of hot water at 175 degrees F and whisk in a rapid W or M motion for 30 seconds until the matcha is fully dissolved and lightly frothy with no clumps.

Build the Layered Drink

Spoon 2 to 3 tablespoons of the cooled blueberry syrup into the bottom of a tall glass. Fill the glass with ice, then slowly pour the oat milk over the ice so it sits on top of the blueberry layer.

Add the Matcha Layer

Very slowly pour the whisked matcha over the back of a spoon so it floats gently on top of the oat milk layer. This creates a beautiful three-tone gradient of purple, white, and green.

Serve and Stir

Garnish with a few fresh blueberries on top and serve immediately. Stir the drink together before sipping to blend all the flavors or enjoy each sip as the layers naturally combine.
