Prepare the Filling

Mix crumbled feta cheese with chopped spinach one beaten egg and black pepper in a bowl until well combined and set aside.

Layer the Phyllo

Brush a baking dish with melted butter and lay 4 sheets of phyllo dough brushing each sheet with butter as you layer them into the dish.

Add Filling and Top Layers

Spread the cheese and spinach filling evenly over the phyllo then layer the remaining 4 sheets on top brushing each one with butter and tucking in the edges neatly.

Brush and Bake

Beat the remaining egg with a splash of milk and brush the top of the borek then bake at 180C for 25 to 30 minutes until deeply golden and crispy.

Substitutions
