Breakfast Quesadilla

Instructions
Scramble the eggs
Melt half the butter in a non-stick skillet over medium heat. Whisk the eggs with a pinch of salt, pour into the pan, and scramble gently until just set. Remove and set aside.
Assemble the quesadilla
Lay one tortilla flat, sprinkle half the cheese over one half of the tortilla, add the scrambled eggs, then top with remaining cheese and fold the tortilla over.
Cook until crispy
Melt remaining butter in the same pan over medium heat. Place the folded quesadilla in the pan and cook for 2 to 3 minutes per side until golden and crispy and the cheese is fully melted.
Slice and serve
Remove from pan, let rest for 1 minute, then cut into wedges and serve with salsa or sour cream.
