Instructions

1

Cook the Bacon

Cook bacon pieces in a large skillet over medium heat for 6 to 8 minutes until crispy, stirring occasionally. Remove with a slotted spoon and set aside, leaving a little bacon fat in the pan.

2

Cook the Corn

Add corn kernels to the skillet with the bacon fat and cook over medium high heat for 3 minutes until lightly charred and fragrant. Set aside with the bacon.

3

Cook the Pasta

Cook farfalle in a large pot of salted boiling water according to package directions. Reserve half a cup of pasta water and then drain the pasta.

4

Toss and Finish

Add butter to the skillet and let it melt over low heat, then add the drained pasta, bacon, and corn. Toss everything together adding pasta water as needed, then top with parmesan and chives.

Substitutions

baconturkey bacon or diced pancetta
farfallefusilli or penne

Common mistakes

Discarding all the bacon fat from the pan which removes a major layer of flavor from the dish
Not reserving pasta water before draining which means the butter sauce cannot cling properly to the pasta
