Instructions
Pan Fry Gnocchi
Heat olive oil in a large non stick skillet over medium high heat and add gnocchi in a single layer cooking undisturbed for 3 to 4 minutes until golden and crispy on one side.
Flip and Cook
Flip gnocchi and cook for another 2 to 3 minutes until golden on the other side then push to one side of the pan.
Add Tomatoes
Add cherry tomatoes to the empty side of the skillet and cook for 2 minutes until they begin to blister and soften then mix with the gnocchi.
Finish and Serve
Remove from heat and top with fresh mozzarella and basil leaves then drizzle with balsamic glaze and serve immediately.
