Pop and Prepare
Place popped popcorn in a large bowl lined with parchment paper. Remove any unpopped kernels and set aside while you prepare the caramel.
Make the Caramel
Melt butter in a medium saucepan over medium heat then stir in brown sugar and salt. Bring to a boil and cook for 3 minutes without stirring until the caramel darkens slightly.
Coat and Set
Remove caramel from heat and quickly stir in baking soda which will make it foam. Immediately pour over popcorn and stir to coat evenly then spread on parchment to set for 5 minutes.
