Instructions
Make the Custard Dip
In a wide shallow bowl, whisk together the eggs, whole milk, and 1 tablespoon of brown sugar until smooth. Place the brioche slices into the custard and let them soak for 2 minutes per side, ensuring they absorb the mixture fully.
Cook the French Toast
Heat 1 tablespoon of butter in a large skillet over medium heat. Place the soaked brioche slices in the pan and cook for 3 to 4 minutes per side until deeply golden brown and cooked through. Transfer to a plate and keep warm.
Caramelize the Bananas
In the same skillet, melt the remaining butter over medium heat and add the remaining brown sugar. Once bubbling, add the banana slices and cook undisturbed for 1 to 2 minutes until golden on each side. Do not stir too much or they will fall apart.
Plate and Serve
Place the French toast on individual plates and carefully spoon the caramelized banana slices and all of the pan sauce directly over the top. Serve immediately while everything is hot and the caramel is still glossy.
