Instructions
Soften the Aromatics and Carrots
Heat olive oil in a large saucepan over medium heat and add the diced onion and chopped carrots. Cook for 8 to 10 minutes stirring frequently until the carrots are completely soft and the onion is translucent and slightly golden.
Add Garlic and Tomatoes
Stir in the minced garlic and cook for 30 seconds until fragrant. Pour in the whole peeled tomatoes crushing them with a wooden spoon as you add them. Stir in the dried basil.
Simmer the Sauce
Bring the sauce to a gentle simmer and cook uncovered for 15 minutes stirring occasionally. The sauce will thicken and the flavors will deepen significantly. The carrots must be completely soft before blending.
Blend Until Perfectly Smooth
