Instructions
Cook Pasta and Cauliflower Together
Bring a large pot of salted water to a boil and cook the macaroni and cauliflower florets together for 10 minutes until both are very tender. Reserve half a cup of pasta water then drain everything together.
Blend the Cauliflower
Transfer only the cooked cauliflower to a blender with the milk and blend until perfectly smooth and creamy. The cauliflower will thicken the sauce naturally without any starchy taste.
Make the Cheese Sauce
Melt butter in the same large pot over medium heat and pour in the blended cauliflower milk mixture. Stir in the garlic powder and shredded cheddar a handful at a time until the sauce is completely smooth.
Combine and Serve
Add the drained pasta to the cheese sauce and stir well to coat every noodle. If the sauce is too thick add reserved pasta water a tablespoon at a time until it reaches a creamy consistency.
