Instructions
Prepare the filling
Scatter shredded cheddar and finely diced red capsicum evenly over one half of each tortilla. Sprinkle a tiny pinch of mild paprika over the cheese for gentle flavour.
Fold and cook
Fold each tortilla in half to enclose the filling. Melt butter in a non-stick pan over medium-low heat and place folded quesadillas in the pan.
Toast until golden
Cook for 2 to 3 minutes per side pressing down gently with a spatula until each side is golden and the cheese is fully melted inside.
Slice and cool
Remove from heat and allow to cool for 2 minutes then slice into small triangles using a pizza cutter or sharp knife. Serve with mild guacamole or yogurt.
