Instructions
Prep the Veggies
Dice the red and yellow bell peppers into very small pieces so they cook quickly and are easy for kids to eat, then mix them together in a small bowl and season lightly with garlic powder.
Assemble the Quesadillas
Place one tortilla flat and sprinkle half a cup of shredded mozzarella over one half of the tortilla, then scatter a handful of diced peppers over the cheese and fold the tortilla in half.
Cook Until Golden
Melt a small amount of butter in a skillet over medium heat, place the folded quesadilla in the pan, and cook for two to three minutes per side until the outside is golden and crispy and the cheese has fully melted.
Slice and Serve
Remove the quesadilla from the pan, let it cool for one minute, then cut it into three triangles using a pizza cutter or sharp knife and serve with mild salsa or sour cream on the side.
