Chicken and Cream Cheese Cucumber Sandwiches
These soft tea-style sandwiches are made with shredded rotisserie chicken mixed with cream cheese and tucked between slices of soft white bread with fresh cucumber. They are light refreshing and easy to eat making them an ideal lunchbox option for younger school-aged children.

Instructions
Make the Chicken Spread
In a medium bowl combine the shredded rotisserie chicken with the softened cream cheese garlic powder and dried dill then stir until the mixture is creamy and well combined.
Prepare the Bread
Lay all four slices of soft sandwich bread on a clean cutting board and spread the chicken cream cheese mixture evenly over two of the slices covering the bread all the way to the edges.
Add Cucumber and Close
Layer 4 to 5 thin cucumber slices over the chicken mixture on each prepared slice then top with the remaining plain bread slices and press down gently to help the sandwich hold together.
Trim and Pack
Use a sharp knife to cut the crusts off each sandwich if desired then cut each sandwich into four small triangles or rectangles and pack them snugly in an airtight lunchbox container.
