Pour the chicken stock into a large pot and bring it to a boil over medium high heat. Add the diced carrots and celery and cook for 5 minutes.

Add the diced chicken breast and uncooked white rice to the pot. Stir to combine and reduce heat to a gentle simmer.

Allow the soup to simmer for 25 to 30 minutes until the chicken is cooked through and the rice is tender and has absorbed some of the broth.
