Instructions
Make the Sauce
In a bowl, whisk together the sesame paste, chili oil, soy sauce, and minced garlic. Loosen the mixture with 3 to 4 tablespoons of warm water until it forms a smooth pourable sauce. Divide the sauce between two serving bowls.
Cook the Pork
Heat a skillet over medium high heat with a little oil. Add the ground pork and cook, breaking it up, for about 5 to 7 minutes until browned and crispy. Season with a pinch of salt and a splash of soy sauce.
Boil the Noodles
Cook the fresh wheat noodles in a pot of boiling salted water for 2 to 3 minutes until tender. Drain well and reserve a small amount of cooking water to adjust the sauce consistency if needed.
Assemble the Bowls
Divide the hot drained noodles between the two bowls over the sauce. Top each bowl with the crispy seasoned pork. Toss everything together vigorously before eating and garnish with chopped scallions and additional chili oil.
