Chocolate Dipped Banana Pops

Instructions
Prep the Bananas
Insert a popsicle stick into the flat end of each banana half and place them on a parchment lined baking sheet. Freeze the bananas for at least one hour until completely firm.
Melt the Chocolate
Combine chocolate chips and coconut oil in a microwave safe bowl and heat in 30 second intervals stirring between each until fully smooth and melted. Let the chocolate cool for two minutes.
Dip and Decorate
Dip each frozen banana into the melted chocolate letting the excess drip off. Immediately roll or sprinkle with rainbow sprinkles or crushed graham crackers before the chocolate sets.
Set and Serve
Place decorated banana pops back on the parchment lined sheet and freeze for another 10 minutes until the chocolate shell is completely firm. Serve immediately or store in the freezer wrapped in plastic wrap.
