Chocolate Dipped Strawberries

Instructions
Prepare the Strawberries
Wash the strawberries gently and pat them completely dry with paper towels. This is the most important step because any moisture on the berries will cause the chocolate to seize and clump. Line a baking sheet with parchment paper and set aside.
Melt the Chocolate
Combine the semi sweet chocolate chips and coconut oil in a microwave safe bowl and microwave in 30 second intervals stirring well between each interval until the chocolate is completely smooth and glossy. Be careful not to overheat as chocolate burns easily.
Dip the Strawberries
Hold each strawberry by the stem and dip it into the melted chocolate swirling gently to coat about three quarters of the berry. Allow excess chocolate to drip off then place on the parchment lined baking sheet. Immediately add sprinkles before the chocolate sets.
Drizzle and Set
Melt the white chocolate chips in the same way and use a fork or piping bag to drizzle white chocolate over the dipped strawberries for a decorative finish. Refrigerate the tray for at least 20 minutes until the chocolate is fully set before serving.
