In a large mixing bowl combine peanut butter, powdered sugar, graham cracker crumbs, and melted butter. Stir until a thick dough forms and press evenly into a parchment-lined 9x13 inch pan.
Melt the chocolate topping
In a microwave-safe bowl combine chocolate chips and coconut oil. Microwave in 30-second intervals stirring between each until fully smooth and glossy.
Assemble and chill
Pour the melted chocolate evenly over the peanut butter base and spread with a spatula to cover completely. Transfer the pan to the refrigerator.
Slice and serve
Refrigerate for at least 1 hour until the chocolate is fully set. Lift out using the parchment, slice into 16 bars, and serve cold or at room temperature.
