Mix peanut butter, powdered sugar, and vanilla extract together in a bowl until a smooth and thick dough forms. If the mixture is too sticky, add a little more powdered sugar one tablespoon at a time until it holds its shape when rolled.

Roll and Freeze the Centers

Roll the peanut butter mixture into balls approximately 2.5 centimeters in diameter and place on a parchment-lined baking sheet. Freeze the balls for at least 30 minutes until very firm, which makes coating in chocolate much easier.

Melt the dark chocolate and coconut oil together in a heatproof bowl set over barely simmering water, stirring until completely smooth and glossy. Remove from heat and let cool for 3 minutes so it does not immediately melt the filling.
