Instructions
Make the Peanut Butter Filling
Mix peanut butter, powdered sugar, and vanilla extract together in a bowl until a smooth and thick dough forms. If the mixture is too sticky, add a little more powdered sugar one tablespoon at a time until it holds its shape when rolled.
Roll and Freeze the Centers
Roll the peanut butter mixture into balls approximately 2.5 centimeters in diameter and place on a parchment-lined baking sheet. Freeze the balls for at least 30 minutes until very firm, which makes coating in chocolate much easier.
Melt the Chocolate Coating
Melt the dark chocolate and coconut oil together in a heatproof bowl set over barely simmering water, stirring until completely smooth and glossy. Remove from heat and let cool for 3 minutes so it does not immediately melt the filling.
Dip and Set the Truffles
Working quickly, dip each frozen peanut butter ball into the melted chocolate using a fork, letting the excess drip off. Place back on the parchment sheet and immediately sprinkle with flaky sea salt. Refrigerate for 20 minutes to set completely.
