Instructions
Make the Churro Dough
Bring water to a boil in a medium saucepan with a tablespoon of sugar and a pinch of salt. Remove from heat and stir in the flour all at once using a wooden spoon until a smooth thick dough forms with no lumps. Let it cool for 5 minutes before transferring to a piping bag fitted with a large star tip.
Fry the Churros
Heat vegetable oil in a deep heavy pot to 375 degrees Fahrenheit. Pipe 4 to 5 inch lengths of dough directly into the hot oil cutting with scissors. Fry 4 to 5 churros at a time for 3 to 4 minutes turning once until deep golden brown all over. Do not overcrowd the pot as it lowers the oil temperature.
Make the Chocolate Sauce
While the churros fry heat the heavy cream in a small saucepan over medium heat until it just begins to steam and small bubbles appear around the edges. Do not let it boil. Pour the hot cream over the chopped dark chocolate in a bowl and let sit for 2 minutes before stirring into a glossy smooth sauce.
Coat and Serve Immediately
Remove the fried churros with a slotted spoon and drain briefly on paper towels for 30 seconds. Roll each churro immediately in the cinnamon sugar mixture while still hot so the coating adheres perfectly. Serve at once alongside the warm dark chocolate sauce for dipping and do not delay serving.
