Preheat and Prepare Sugar Mixture
Preheat oven to 425 degrees F and line a baking sheet with parchment paper. Combine sugar and cinnamon in a small bowl and mix well.
Coat and Fold Pastry
Brush the puff pastry sheet with melted butter and sprinkle generously with the cinnamon sugar mixture. Fold both long sides toward the center meeting in the middle, then fold in half again to create a log shape. Slice into half inch pieces.
Bake
