Make the Choux Dough

Combine water butter and salt in a saucepan over medium heat. Bring to a boil then add flour all at once and stir vigorously until a smooth dough ball forms and pulls away from the sides. Remove from heat.

Let the dough cool for 5 minutes then beat in eggs one at a time mixing well after each addition until the dough is smooth glossy and pipeable. The dough should fall slowly from a spoon.

Heat Oil and Pipe Dough

Heat oil to 375 degrees F. Transfer dough to a piping bag fitted with a star tip. Pipe 1 inch pieces of dough directly into the hot oil cutting with scissors. Do not pipe too many at once.

Fry Until Golden

Fry the churro bites for 3 to 4 minutes turning occasionally until they are deep golden and cooked through. Remove with a slotted spoon and drain briefly on paper towels.

While still hot toss churro bites in the cinnamon sugar mixture until fully coated. Serve immediately alongside melted chocolate for dipping.
