Instructions
Melt Butter and Chocolate
Preheat oven to 175C. In a medium saucepan over low heat, melt butter and chocolate together, stirring constantly until smooth. Remove from heat and let cool for 5 minutes.
Mix Wet Ingredients
Whisk sugar into the cooled chocolate mixture until combined. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
Fold in Dry Ingredients
Sift flour, cocoa powder, and salt into the chocolate mixture. Fold gently with a spatula until just combined. Do not overmix or the brownies will become cakey.
Bake
Pour batter into a greased 20cm square baking pan lined with parchment paper. Spread evenly and bake for 22 to 25 minutes until the edges are set but the center still has a slight jiggle.
Cool and Slice
Allow brownies to cool completely in the pan for at least 1 hour before slicing into 16 squares. Cooling is essential for achieving that perfect fudgy texture.
