Instructions

1

Bake and Cool the Cake

Bake the vanilla cake according to the box instructions in a 9 by 13 inch pan and let it cool completely to room temperature. Once fully cooled, crumble the entire cake into fine crumbs in a large bowl using your hands or a fork.

2

Form the Cake Balls

Add the vanilla frosting to the cake crumbs one tablespoon at a time and mix until the mixture holds together when pressed but is not wet or sticky. Roll the mixture into 24 uniform balls about 1 inch in size and place on a parchment-lined baking sheet. Freeze for 15 minutes.

3

Dip in White Chocolate

Melt the white chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals stirring between each until smooth. Dip the tip of each lollipop stick into the chocolate then insert it into a cake ball. Dip the entire pop into the melted chocolate letting excess drip off.

Decorate and Set

Immediately shower each freshly dipped cake pop with rainbow sprinkles before the chocolate sets. Stand the finished pops upright in a block of styrofoam or a tall glass filled with rice to hold them in place while the chocolate hardens completely which takes about 10 minutes.

Substitutions

white chocolate chipsmilk chocolate chips for a richer and more classic chocolate coating
vanilla frosting from a can2 tablespoons of cream cheese for a slightly tangy and less sweet binder

Common mistakes

Adding too much frosting to the cake crumbs which makes the mixture too wet and causes the balls to crack or fall apart when dipped
Not freezing the cake balls before dipping which causes them to fall off the stick when submerged in warm melted chocolate
