Confetti Birthday Cake Pops

Instructions
Bake and Cool the Cake
Bake the vanilla cake according to the box instructions in a 9 by 13 inch pan and let it cool completely to room temperature. Once fully cooled, crumble the entire cake into fine crumbs in a large bowl using your hands or a fork.
Form the Cake Balls
Add the vanilla frosting to the cake crumbs one tablespoon at a time and mix until the mixture holds together when pressed but is not wet or sticky. Roll the mixture into 24 uniform balls about 1 inch in size and place on a parchment-lined baking sheet. Freeze for 15 minutes.
Dip in White Chocolate
Melt the white chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals stirring between each until smooth. Dip the tip of each lollipop stick into the chocolate then insert it into a cake ball. Dip the entire pop into the melted chocolate letting excess drip off.
Decorate and Set
Immediately shower each freshly dipped cake pop with rainbow sprinkles before the chocolate sets. Stand the finished pops upright in a block of styrofoam or a tall glass filled with rice to hold them in place while the chocolate hardens completely which takes about 10 minutes.
