Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until al dente. Reserve half a cup of pasta water before draining.
Make the Cowboy Butter
In a large skillet melt butter over medium heat. Add minced garlic and red pepper flakes and cook for 1 to 2 minutes until fragrant but do not let the garlic brown.
Build the Sauce
Stir in Dijon mustard and lemon juice into the butter mixture. Add reserved pasta water a splash at a time to create a silky emulsified sauce.
Toss the Pasta
Add drained spaghetti directly into the skillet. Toss vigorously with tongs to coat every strand evenly with the cowboy butter sauce.
Garnish and Serve
Remove from heat and top with fresh chopped parsley. Serve immediately with extra lemon wedges and parmesan if desired.
